Wine made from organic vineyards. Manual harvest in 15 kg boxes. Carefully selected grapes first by choosing the Pansa Rosada vines, mixed among the old Pansa Blanca vines, and making a strict selection of it. They are then cooled in the cold chamber to obtain aromatic precursors. Then they are destemmed and go into a long maceration with the skins, pumping-over the must once a day, while wild fermentation starts with native yeast in stainless steel tanks for 2 weeks.
