Wine made from organic vineyards. Harvested by hand and transported in 15 kg boxes and strict grape selection. Pre-fermentation maceration on the skins for few hours in a cold room to get aromatic precursors. Afterwards, grenache blanc does a skin maceration to develop primary aromas. Each variety it’s gently pressed to obtain and use exclusively first-run must. Fermentation is carried out in new oak barrels for three weeks (each grape variety separately) and is followed by 3 months aging on the lees. Aging in their lees for 3 months with batonage in the same barrel.
Still white wine made with local grapes varieties, in particular 75% Pansa Blanca and 25% Grenache blanc. Limited production, 1,600 bottles. With an alcohol content of 12,5% vol.
