Analysis of the grape to determine the day of collection

These days we carry out daily maturation controls of the different vineyards to be attentive to the optimal moment to harvest the grapes. The monitoring of the evolution of the sugar/grain ratio and the grain size can be very useful to determine the optimal harvest date.
